lemon blueberry yogurt cake

Having family over for the holidays?  Have time off from work?  Just feel like baking?

Make this.  But seriously.  Your family/friends will think you’re totally awesome [because you are].

And while you’re over at the Smitten Kitchen, you might as well check out all her recipes.  I’m in love.

She has a lot of recommendations for how to change up the recipe to your liking. You can substitute any berry in for blueberries, and I bet lime would work wonders too.  Hmm raspberry and lime yogurt cake?  Sure!  Why not.  Do your thing.

Needless to say, this is my first of many iterations.

The cake is extremely moist, but be warned: the recipe says to bake to 50 + minutes- I baked mine for a little over an hour [62 minutes to be exact].

There’s fruit so that makes it a contender for breakfast, anything goes for lunch, and its definitely sweet enough to constitute a dessert.  I actually didn’t even put in the whole cup of sugar [probably 3/4 of a cup], and still thought it was plenty sweet.

I hear it goes perfectly with a cup of tea in the morning.  But that’s just what I hear…

Cauliflower

What?  That title up there doesn’t just draw you in? You aren’t on the edge of your seat wanting more?

Yeah, cauliflower has a bad wrap.  It can be tasteless, is usually served less than fresh, and as just another vegetable around the ranch dressing.  But trust me on this one friends: it’s good.  Really, really good.  The key?  Roasting.  It makes everything better.

I bought cauliflower for this recipe [great blog by the way] that I cut in half for my lunch this past week, and since I still had half a head left- I couldn’t let it go to waste!  I had made this recipe from Smitten Kitchen before, and remembered loving it so I made my own [I think pretty close] version on the fly.  Another lesson?  Cumin is good.  I’m still not 100% sure how to pronounce it, but I know I like it.  The yogurt/feta mixture that goes with it?  Completely necessary.  It’s amazing.  Just try it.  How could it hurt?  Cauliflower is like $2 at the grocery.  Probably because not many people have caught on to how awesome it is- so let’s just keep this between me and you.  Cool?  Cool.

Christmas spirit

Well, it’s officially December which means it’s officially OK to decorate your house, listen to Christmas music, and bake cookies.  Gingersnaps to be exact.  The smell just screams snow and sipping hot cocoa by the fire.

So go.  Bake some cookies, play that Bieberfever Christmas cd, and decorate your tree.  Or you can just light a scented candle- those usually get the Christmas spirit moving.
